What is ServSafe®?

ServSafe® is designed to introduce food service professionals to the foundations of food safety. Produced by the Educational Foundation of the National Restaurant Association, the curriculum is based upon the requirements of the United States Food and Drug Administration's current Model Food Code, the national standard for food safety.  We also accept the Safe Food Handlers course and other certification courses that are approved by the health department.  This could include the Illinois Public Health Course, National Registry and Experian.

Why do I need a certification course?

St. Charles County's Food Code requires that the person in charge successfully complete a manager certification course. These courses meet that requirement. Included in the course are units on the prevention and causes of foodborne illness, safe food handling, sanitary facilities and equipment and employee training. This training benefits cooks and assistant managers as well. 

What is the Basic Sanitation Course?

This course is designed for lead workers, cooks and other employees.  It is a 2 ½ hour course taught by sanitarians.  The course will provide sanitation information on proper food handling, storing food and sanitizing equipment and utensils.  This course is not equivalent to the manager certification course, such as ServSafe®.  At least one person per establishment will still be required to complete the more extensive manager certification test, eg.
